This smoked Deer Roast is amazing. A great way to make game meat something flavorful, tender, and delicious. Try it with other rubs for a different flavor.

Equipment

  • 1 Traeger Smoker
  • 1 Large Bowl

Ingredients
  

  • 1 Deer Roast
  • 8 Cups Water
  • 1/2 Cup White Wine Vinegar
  • 1/2 Cup Brown Sugar
  • 1/2 Cup Salt
  • 1 Tbsp Mustard Seed
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Black Pepper
  • 1 Tbsp Dried Thyme
  • 2 Bay Leaves
  • Traeger Saskatchewan Dry Rub

Instructions
 

  • Mix water, white wine vinegar, sugar, and salt in large bowl
  • Add remaining ingredients (except dry rub)
  • Submerge deer roast in bowl. Cover and refrigerate for 48 hours.
  • Remove and pat dry
  • Apply dry rub
  • Preheat smoker to 225 degrees
  • Place on smoker until internal temperature is between 130-140 degrees, approximately 1 hour
  • Remove and let sit for 15 minutes
  • Cut into thin slices (against the grain) and enjoy
