Smoked Deer Roast

This smoked Deer Roast is amazing. A great way to make game meat something flavorful, tender, and delicious. Try it with other rubs for a different flavor.
Prep Time 10 minutes mins
1 Traeger Smoker
1 Large Bowl
1 Deer Roast 8 Cups Water 1/2 Cup White Wine Vinegar 1/2 Cup Brown Sugar 1/2 Cup Salt 1 Tbsp Mustard Seed 1 Tbsp Minced Garlic 1 Tbsp Black Pepper 1 Tbsp Dried Thyme 2 Bay Leaves Traeger Saskatchewan Dry Rub
Mix water, white wine vinegar, sugar, and salt in large bowl
Add remaining ingredients (except dry rub)
Submerge deer roast in bowl. Cover and refrigerate for 48 hours.
Remove and pat dry
Apply dry rub
Preheat smoker to 225 degrees
Place on smoker until internal temperature is between 130-140 degrees, approximately 1 hour
Remove and let sit for 15 minutes
Cut into thin slices (against the grain) and enjoy
